«Hola» vale a toda hora y con toda persona. «Buenos días» va con la mañana, «buenas tardes» con la tarde y «buenas noches» con la noche.
hola is the all-purpose greeting: any hour, anyone, friendly without being disrespectful. The other three follow the clock — buenos días until the midday meal, buenas tardes from then until dark, buenas noches once it is dark. All three are plural in Spanish (días, tardes, noches); that is simply how the phrases are built.
«Buenas noches» saluda y también cierra el día. Para terminar una conversación: «adiós» o «hasta luego».
buenas noches does double duty — 'good evening' when you arrive and 'good night' when you leave. To take your leave, adiós is the plain goodbye; hasta luego (literally 'until later') is what most people actually say when they expect to meet you again.
En español una exclamación abre con ¡ y cierra con !: ¡Hola! Una pregunta abre con ¿ y cierra con ?: ¿Ana?
Spanish opens an exclamation with an upside-down ¡ and a question with an upside-down ¿, so a reader hears the tune of the sentence before reaching its end. Both opening marks are obligatory in writing. Note the tilde on adiós — it falls on the last syllable, and level 8 will explain why.

Ahora hablas tú, en voz alta. Por la mañana: «¡Buenos días!». Por la tarde: «¡Buenas tardes!». Por la noche: «¡Buenas noches!». Y al final: «¡Adiós!» o «¡Hasta luego!».
Say all four out loud now. Then use them for real today: greet three people at the right hour, and leave each one with hasta luego. If you hesitate over the hour, hola is always safe.
